ANTONIO DI SIENO

Born in 1979 from a family of butchers in a small village close to Napoli, Antonio, fourth generation, can be defined as the butcher of the future. Today, thanks to his project “Meat Innovation”, he is trying to find new ways to cut and treat the meat from all over the world. He is also famous for “Tondo Napoletano”, the first fried hamburger. Antonio, in fact, always keeps an eye on chefs needs by proposing new solutions and new products, which are able to amply chefs ‘creativity.
Antonio, owner of “Trippicella” (1940), called Butcher 3.0, because of his ability in mixing tradition and innovation. He loves to combine different kind of meat from different animals in order to create innovative tastes and flavors such as the 3 layers’ hamburger composed of deer meat, Mangalica lardo, Patanegra fat, wild boar, roe deer and lardo from Benevento.
