What about a good Tagliatelle al Ragu alla Bolognese?

If you remember it was the protagonist recipe of the 3rd IDIC.

Well today we read from the italian first newspaper, la Repubblica, an interview to Paolo Monti, original member of Itchefs-Gvci who serve Tagliatelle in a vegetarian way.

Is it possible? Yes, thanks to a good ingredient from plants, but who smell and taste like meat. Good for veggie customer for religious tradition, good for an ethical choice.
