Coming up this November in Dubai will be the official launch of the PizzAcademy, to take place during the course of the tenth edition of the Italian Cuisine & Wines World Summit.
Founded by 50 cooks and pizza makers, all residents and active in the E.A.U., its aim is to create a community of professionals attentive to quality, as recognized in a few basic principles whose common denominator is rigor.
The Academy’s manifesto is as follows:
1. Pizza is a fundamental component of Italy’s great culinary Heritage.
2. Certain traditional Italian pizza-making techniques (dough structure, shape, size,
cooking method, toppings and fillings) must be respected.
3. Creativity and innovation have their place in contemporary-style pizza, within the context of the
tenets here outlined.
4. Pizza must be made with the aim of giving customers a healthy, easy to digest meal.
5. The best expressions of pizza are those made with quality Italian ingredients and/or ingredients that are seasonal, sustainable, regional, healthy and nutritious.
-In order to be recognised by consumers, PizzAcademy members are allowed to wear the Academy pin on their uniforms;
-Members are allowed to participate free of charge in the scheduled bimonthly professional development seminars held by the PizzAcademy, and in all the special B2B, trade events, and Master Classes organised by the Academy;
– the outlets where PizzAcademy members work are allowed to publicize the fact and in doing so, give their customers an ulterior guarantee of quality.
The foundation of the Academy will be celebrated on November 23th.
The Itchefs-Gvci cooks network thus continues their commitment to Italy’s most iconic dish, which has already had a place of honor during past editions of the Summit in the the Pizza-Up event, held for the first time outside Italy during the Italian Pizza World Summit, organized, as always, by Rosario Scarpato (The-I-Factor).
